Nothing screams comfort like a good roast. Costco carries several types of roasts, but the stand-out favorite is a simple beef eye round roast. It’s affordable while still being tender and juicy. Plus, all you have to do is sear the meat before placing it in the oven to tenderize and finish cooking.  As a result, this is the perfect family-friendly Christmas dinner.

Ham, like prime rib, is another classic for a hearty Christmas dinner. It really depends on which meat you and your loved ones prefer. Costco has you covered if you want ease with their pre-cooked, pre-sliced hickory smoked ham. All you have to do is warm and serve before your guests arrive.

Or maybe you’re feeling ambitious and want to make your own. Don’t worry, you can glaze and cook your own piece of ham as well.  Keep an eye out when shopping the aisles for special proteins like this — as we get closer to the holidays, it will be hard to miss in-store.

1. Surf and Turf Dinner

Bring two indulgent proteins together in harmony with surf and turf. And during the colder seasons, it’s a hearty and luxurious combination.

Preheat the oven to 400°F. Mix butter, pepper, salt, and herbs like thyme, basil, and rosemary together and spread evenly on your roast. Place the beef on a roasting pan (for best results let the protein come to room temperature before cooking) and cook in the oven for thirty minutes. For medium rare, make sure the temperature reaches 130°F to 140°F, and medium should be at least 145°F to 155°F.

For the shrimp, make sure they’re thawed. Then, create a marinade by combining olive oil, butter, lemon juice, garlic, salt and pepper, and parsley in a bowl. Toss your shrimp in the marinade.  Line a baking sheet with parchment paper and place shrimp in an even layer. Cook for only 6 to 8 minutes until browned and no longer raw.

Here are the ingredients and pairing suggestions:

2. Easy Ham Dinner

Instead of spending all your time in the kitchen away from the fun, make Christmas dinner easy with pre-cooked ham.

Start by heating your oven to 350°F, then remove the ham from its packaging. Wrap the precooked ham tightly in tin foil, then place on a baking sheet. When the oven is ready, heat up the ham for about 15 minutes, or until the internal temperature is at least 130°F. The ham needs to rest for 10 minutes, then it’s ready to go!

Keep it simple with Kirkland Signature’s mac and cheese, fresh dinner rolls, and premade salad on the side. End the night with Costco’s delicious apple pie and you’ve created a memorable Christmas dinner.

3. A Grinch’s Christmas Dinner

This is the perfect Costco Christmas dinner for the kiddos. Recreate the famous “Roast Beast” from How the Grinch Stole Christmas. Starting with an eye round roast, this meal is savory, hearty, and makes for great leftovers.

There are so many ways to cook the roast, but the slow cooker is the easiest. Start by combining paprika, oregano, garlic powder, onion powder, salt, and pepper in a bowl then cover the roast. From there, chop up your preferred vegetables, like carrots, potatoes, and onions. Place your vegetables and roast in the slow cooker. Mix together beef broth and a few drops of Worcestershire, then pour into the crockpot. Let it cook on low for eight hours, or on high for five.

When the roast is almost finished, plop a few crescent rolls on a baking sheet and cook in the oven. They’re flaky and buttery, perfect for soaking up that broth. And for dessert, grab some peppermint bark!

Here’s what we propose you pick up at the store to recreate this meal:

4. Sugar Glazed Ham Dinner

Glazed hams are a traditional holiday meal. Grab one of Costco’s spiral hams for this delicious dinner.

First, preheat your oven to 325°F. Place your ham on a rack in a shallow roasting pan. Score the ham with a knife so the glaze seeps into the meat, then coat it with the glaze. Cook for around two hours, or until the thermometer reads 130°F. Next, prep your glaze by heating a saucepan and pouring in grapefruit and orange juice. Bring to a boil, then cook until the liquid is reduced by half. From there, add your molasses, honey, packed brown sugar, Dijon mustard, and ground pepper. Bring to a boil once more, then stir until thickened. Brush the glaze over the ham and then cook for another twenty minutes, or until the temperature reaches 140°F.

Glazed hams are versatile, but some of the best sides include roasted Brussels sprouts and potatoes. Be sure to finish with a pie — pecan works great here.

5. Dry Rub Roast

Dry rubs offer exceptional flavor to an already delicious protein. What’s even better is that you can make your twist on any dry rub depending on your favorite flavors.

For this dry rub, combine ground pepper, fresh oregano, smoked paprika, smoked salt, chopped garlic, and brown mustard. After, start preheating your oven to 500°F. Next, prep your meat by brushing a thin layer of mustard all over the outside. Then, sprinkle your rub around your roast until it’s evenly coated. Cook your roast uncovered in a Dutch oven or roasting pan (the timing equals seven minutes per pound). Turn the oven off after that allotted time and then leave it in the oven for another two hours, giving it the perfect outside crust yet a moist, tender center. Make sure the internal temperature is around 130°F before serving.
